Festive Cinnamon Swirl Eggnog Bread Pudding

A heavenly bread pudding that encapsulates the festive season with the intoxicating scent of cinnamon and the richness of eggnog.

Ingredients

  • 1 loaf of cinnamon swirl bread, cut into 1-inch cubes
  • 4 cups eggnog
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup raisins or dried cranberries (optional)
  • 1/2 cup chopped pecans or walnuts (optional)
  • 2 tablespoons unsalted butter, melted
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Whisk together the eggnog, eggs, granulated sugar, vanilla extract, ground cinnamon, ground nutmeg, and salt until well combined.
  3. Place the cinnamon swirl bread cubes in the greased baking dish, and sprinkle the optional raisins or nuts over the top.
  4. Pour the eggnog mixture evenly over the bread, pressing down gently to ensure all pieces are soaked.
  5. Drizzle the melted butter over the top of the bread pudding mixture.
  6. Allow the mixture to sit for about 10-15 minutes to let the bread soak up the eggnog mixture.
  7. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a knife comes out clean.
  8. Remove from the oven and let it cool for about 10 minutes before serving.
  9. Serve warm, dusted with powdered sugar, and enjoy with whipped cream or additional eggnog.

Notes

Pairs beautifully with whipped cream or vanilla ice cream. Can be stored in the refrigerator for up to 3 days.
