Soft and fluffy banana muffins that are a nostalgic favorite, perfect for breakfast or a snack.

Ingredients

  • 2 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners.
  2. Mash the ripe bananas with a fork until smooth.
  3. Add the melted butter to the mashed bananas and stir.
  4. Mix in the baking soda and a pinch of salt.
  5. Stir in the sugar, followed by the beaten egg and vanilla extract.
  6. Gently mix in the flour until just incorporated.
  7. Pour the batter into muffin tins, filling each cup about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let them cool for a few minutes before removing from the tin.

Notes

Store leftover muffins in an airtight container for up to 2 days or freeze for longer storage.
