A heartwarming soup made with ground beef and a variety of vegetables, perfect for a cozy dinner.

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 2 garlic cloves, minced
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup green beans, trimmed and cut into pieces

Instructions

  1. Brown the ground beef in a large pot over medium heat until seared.
  2. Drain the excess fat from the pot.
  3. Add the chopped onion, diced carrots, celery, and minced garlic, and let them cook until softened, about 5 minutes.
  4. Stir in the beef broth, diced tomatoes, dried thyme, salt, pepper, and green beans.
  5. Bring everything to a boil, then reduce the heat and let it simmer gently for about 20-25 minutes.
  6. Taste and adjust the seasoning if necessary, then serve hot.

Notes

For an elevated meal, serve with warm bread or a salad.
