A comforting one-pan dish featuring poached eggs nestled in a spiced tomato sauce, ideal for breakfast or brunch.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 bell peppers, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can (28 oz) of diced tomatoes
  • Salt and pepper to taste
  • 6 large eggs
  • Fresh parsley, for garnish
  • Feta cheese, for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and bell peppers, and sauté until softened (about 5-7 minutes).
  3. Stir in the minced garlic, cumin, and paprika, and cook for another minute.
  4. Pour in the diced tomatoes, and season with salt and pepper. Let it simmer for about 10 minutes until the sauce thickens.
  5. Make small wells in the sauce and crack the eggs into each well.
  6. Cover the skillet and cook until the eggs are set to your liking (about 5-8 minutes).
  7. Garnish with fresh parsley and crumbled feta cheese before serving.

Notes

Serve with crusty bread or warm pita for dipping. Ideal for breakfast, brunch, or a cozy dinner.
