Ingredients

  • 2 2/3 cups shredded coconut
  • 2/3 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 large egg whites
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. Combine the shredded coconut, sugar, and salt in a large bowl.
  3. Beat the egg whites in another bowl until frothy. Add the vanilla extract and whisk until blended.
  4. Pour the egg white mixture into the coconut mixture and stir until well combined.
  5. Use a spoon or cookie scoop to shape the mixture into small mounds on the prepared baking sheet.
  6. Bake for about 20-25 minutes or until the edges are golden brown.
  7. Allow to cool before serving.
