Delightful cookie ice cream sandwiches that combine warm, chewy cookies with cold, creamy ice cream, creating a perfect summer treat.

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup chocolate chips or chunks
  • Ice cream of your choice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, baking soda, and salt.
  3. Cream the softened butter, granulated sugar, brown sugar, and vanilla extract together until light and fluffy.
  4. Beat in the eggs one at a time until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture until combined, then fold in the chocolate chips.
  6. Drop tablespoon-sized balls of dough onto a baking sheet. Bake for 10-12 minutes, or until the edges are golden.
  7. Let the cookies cool completely.
  8. Sandwich a scoop of ice cream between two cookies.

Notes
