  • 2 ripe bananas, mashed
  • 2 eggs
  • 1/3 cup honey or sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan with butter or cooking spray.
  3. Mash the ripe bananas in a mixing bowl until smooth.
  4. Add the cottage cheese and eggs to the mashed bananas and mix well.
  5. Pour in the honey or sugar and vanilla extract, mixing until incorporated.
  6. Whisk together the flour, baking powder, baking soda, salt, and cinnamon in a separate bowl.
  7. Fold the dry mixture into the wet ingredients gently.
  8. Transfer the batter into the prepared loaf pan.
  9. Bake for about 50-60 minutes or until a toothpick comes out clean.
  10. Let it cool in the pan for about 10 minutes before transferring to a wire rack.
