Deliciously fudgy brownies packed with protein and made with cottage cheese for a guilt-free treat.

Ingredients

  • 1 cup cottage cheese (low-fat or regular)
  • 1/2 cup cocoa powder
  • 1/4 cup almond flour (or oat flour for nut-free)
  • 1/2 cup sweetener of choice (honey, maple syrup, or stevia)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×9-inch baking pan.
  2. Blend the cottage cheese, eggs, vanilla extract, and sweetener until smooth and creamy.
  3. Combine the cocoa powder, almond flour, baking powder, and salt in another bowl.
  4. Mix the dry ingredients into the wet mixture until well combined.
  5. Bake for about 25 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes
