A delightful twist on traditional cookie dough that combines the creamy texture of cottage cheese with a touch of healthiness, making for soft and chewy cookies.

  • 1 cup cottage cheese
  • 1/2 cup almond flour
  • 1/2 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) to prepare for baking.
  2. Combine 1 cup of cottage cheese, 1/2 cup of honey (or maple syrup), and 1/2 teaspoon of vanilla extract in a mixing bowl until well mixed.
  3. Stir in 1/2 cup of almond flour, 1/2 cup of rolled oats, 1/2 teaspoon of baking powder, and a pinch of salt until a dough forms.
  4. Fold in chocolate chips if desired.
  5. Scoop tablespoon-sized portions of the dough onto a lined baking sheet, leaving space between each scoop.
  6. Bake for 12-15 minutes or until the edges are golden brown.
  7. Allow the cookies to cool on the baking sheet before transferring to a wire rack.

Notes

Store leftover cookies in an airtight container for 3-5 days or freeze for up to 2 months. Add spices or nuts as desired for flavor variations.
