A simple and delicious bake packed with protein from cottage cheese and eggs, perfect for breakfast, brunch, or a light dinner.

Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1 cup spinach, chopped
  • 1/2 cup bell pepper, diced
  • 1/2 cup onion, diced
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the cottage cheese, eggs, chopped spinach, diced bell pepper, diced onion, garlic powder, salt, and pepper in a mixing bowl.
  3. Pour the mixture into a greased baking dish.
  4. Add shredded cheese on top if desired.
  5. Bake for 25-30 minutes or until the eggs are set and the top is lightly golden.
  6. Cool slightly before cutting into slices and serve warm.

Notes

For added flavor, sauté onions and bell peppers in olive oil before mixing. You can make it ahead of time and bake in the morning.
