Fluffy, bite-sized Cottage Cheese Egg Bites are perfect for a nutritious breakfast and easy meal prep.

Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup chopped spinach
  • 1/4 cup grated cheese (cheddar or mozzarella)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Optional toppings: diced tomatoes, herbs

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the cottage cheese, eggs, chopped spinach, grated cheese, salt, pepper, and garlic powder.
  3. Using a blender, blend the mixture until smooth.
  4. Grease a muffin tin lightly with cooking spray or oil.
  5. Pour the blended mixture evenly into the prepared muffin cups, filling them about three-quarters full.
  6. Bake in the preheated oven for 20-25 minutes.
  7. Let the egg bites cool slightly before removing them from the tin.
