A comforting and flavorful dish featuring juicy chicken breasts slathered in a rich, buttery blend of garlic and fresh herbs.

  • 4 chicken breasts
  • 1/2 cup butter (softened)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix the softened butter with minced garlic, chopped parsley, chopped chives, smoked paprika, cayenne pepper, salt, and pepper.
  3. Pat the chicken breasts dry with a paper towel and season both sides generously with salt and pepper.
  4. Place the chicken in a baking dish and spread the cowboy butter mixture evenly over the chicken.
  5. Squeeze the fresh lemon juice over the chicken.
  6. Bake for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. Let the chicken rest for a few minutes before serving.
