A vibrant and creamy summer dish combining fresh corn, colorful veggies, and crispy bacon bits that’s perfect for picnics and barbecues.

Ingredients

  • 2 cups fresh corn kernels
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tbsp granulated sugar
  • 1 tbsp apple cider vinegar
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup diced red bell pepper
  • 2 tbsp chopped green onions
  • 1/4 cup bacon bits
  • 2 tbsp chopped fresh cilantro

Instructions

  1. Blanch the corn by bringing a pot of water to a boil and blanching the kernels for 2 minutes, then drain and cool.
  2. Prepare the dressing by whisking together mayonnaise, sour cream, sugar, vinegar, salt, and pepper.
  3. Fold in the blanched corn, red bell pepper, green onions, bacon bits, and cilantro into the dressing.
  4. Chill the salad for at least 30 minutes to let flavors meld.
  5. Final stir and adjust seasoning before serving.

Notes

Fresh corn is preferred, but frozen corn can be used. This salad can be made a day in advance for better flavor.
