A comforting dish combining melted Brie cheese and dried cranberries, perfect for family gatherings or romantic dinners.

  • 4 boneless, skinless chicken breasts
  • 120 grams (4.2 oz) of Brie cheese, rind removed and cut into thin slices
  • 1/2 cup dried cranberries
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup chicken broth
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Using a sharp knife, slice a pocket into each chicken breast.
  3. In a small bowl, mix together the Brie slices, dried cranberries, and thyme.
  4. Stuff each chicken breast with the Brie and cranberry mixture.
  5. Season the outside of the chicken breasts with garlic powder, salt, and black pepper.
  6. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  7. Add the stuffed chicken breasts to the skillet, searing each side for about 3-4 minutes.
  8. Pour the chicken broth into the skillet around the chicken breasts.
  9. Transfer the skillet to the preheated oven and bake for 20-25 minutes.
  10. Once done, remove the skillet from the oven and let the chicken rest for a few minutes.
  11. Serve the stuffed chicken breasts hot, garnished with fresh parsley.

Notes

For easier stuffing, consider tenderizing the chicken breasts slightly. Adjust cooking time for air fryer use accordingly.
