Ingredients

  • 1 lb Fresh white fish (such as cod or tilapia)
  • 1 can Coconut milk
  • 1/4 cup Fresh lime juice
  • 1 tbsp Ginger (grated)
  • 1 tsp Turmeric powder
  • 2 cloves Garlic (minced)
  • 1 Onion (chopped)
  • 4 cups Vegetable or fish broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Sauté chopped onions and minced garlic until translucent.
  2. Add grated ginger and turmeric, and cook for an additional minute.
  3. Pour in the vegetable or fish broth and bring to a simmer.
  4. Add fresh white fish and cook until it is opaque and flakes easily.
  5. Stir in coconut milk and fresh lime juice, and season with salt and pepper to taste.
  6. Simmer for a few more minutes until heated through.
  7. Serve hot, garnished with fresh cilantro.

Notes

Use fresh fish for the best flavor. You can play around by substituting the fish with shrimp or scallops. Adjust the spiciness with red pepper flakes if desired.
