A light and refreshing pasta salad with creamy feta and sweet cranberries, ideal for summer BBQs or potlucks.

Ingredients

  • 8 ounces rigatoni
  • 1/2 cup dried cranberries
  • 1 cup crumbled feta cheese
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 teaspoon lemon zest
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the rigatoni according to package instructions in salted water until al dente. Drain and rinse under cold water.
  2. Whisk together mayonnaise, Greek yogurt, lemon juice, honey, lemon zest, salt, and pepper until smooth and creamy.
  3. Add the cooled rigatoni, dried cranberries, crumbled feta, and chopped parsley to the bowl with the dressing.
  4. Toss everything gently until the rigatoni is fully coated with the creamy mixture.
  5. Taste the salad, adjusting the seasoning with additional salt, pepper, or honey as desired.
  6. Chill in the refrigerator for at least 30 minutes to allow flavors to meld.
  7. Serve the salad cold or at room temperature.
