A comforting recipe featuring tender chicken thighs bathed in a creamy herb sauce, served with mashed potatoes and carrots.

  • 4 chicken thighs
  • 1 cup heavy cream
  • 2 tablespoons mixed herbs (thyme, rosemary, parsley)
  • 2 large carrots, chopped
  • 2 cups mashed potatoes
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat until shimmering.
  2. Season the chicken thighs generously with salt and pepper. Add them to the skillet and cook until browned and cooked through, about 6-7 minutes on each side.
  3. Remove the chicken from the skillet and set it aside on a plate, allowing the juices to rest.
  4. In the same skillet, add the chopped carrots. Cook until they soften and take on a bit of color, roughly 5 minutes.
  5. Stir in the heavy cream and mixed herbs, allowing the mixture to come together. Return the chicken to the skillet and let it simmer for a few minutes until the sauce thickens, coating each piece of chicken.
  6. Spoon the creamy herb sauce over the chicken and serve alongside fluffy mashed potatoes for the ultimate comfort meal.

Notes

Pair with crisp green beans or a fresh salad with lemon vinaigrette. A glass of Chardonnay complements the dish perfectly.
