A bright and zesty pasta salad with crisp veggies and creamy dressing, perfect for gatherings or a nostalgic meal.

Ingredients

  • 8 oz pasta (your choice)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, finely chopped
  • 1 cup peas (fresh or frozen)
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to package instructions, then drain and let it cool.
  2. Combine the cooled pasta, cherry tomatoes, cucumber, red onion, and peas in a large bowl.
  3. Whip together the mayonnaise, Greek yogurt, lemon juice, lemon zest, salt, and pepper in a separate bowl until smooth.
  4. Dress the salad by pouring the dressing over the pasta mix and toss to combine.
  5. Chill for at least 30 minutes before serving, then garnish with fresh parsley.
