  • 1 cup diced ham
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional: chives or parsley for garnish

Instructions

  1. Sauté the vegetables: In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery, and sauté until softened, about 5 minutes.
  2. Combine ingredients: Stir in the diced potatoes and ham, then pour in the chicken broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  3. Add the cream: Once the potatoes are tender, stir in the heavy cream and season with salt and pepper.
  4. Blend for creaminess: For a creamier texture, you can blend some of the soup with an immersion blender, or simply mash a few potatoes with a fork.
  5. Serve and garnish: Serve hot, garnished with chives or parsley if desired.
