  • 1 cup morel mushrooms, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 tablespoon fresh thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until translucent.
  2. Add the sliced morel mushrooms to the pot and cook for about 5 minutes until they begin to soften.
  3. Stir in the wild rice and pour in the vegetable broth. Bring to a gentle boil, then reduce heat and simmer for about 40-45 minutes.
  4. Stir in the heavy cream and fresh thyme. Season with salt and pepper to taste.
  5. Heat through for an additional 5 minutes. Serve warm.
