  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 2 cups Brussels sprouts, halved
  • 1 cup heavy cream
  • 1 cup vegetable broth
  • 1 cup breadcrumbs
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste
  • Olive oil or butter for greasing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the sliced carrots, diced potatoes, and halved Brussels sprouts in a large pot with vegetable broth and bring to a boil.
  3. Drain the vegetables once tender and transfer them to a greased baking dish.
  4. Mix the heavy cream with salt and pepper in a separate bowl and pour over the vegetables.
  5. Sprinkle the breadcrumbs and shredded cheese on top.
  6. Drizzle olive oil or melted butter over the top.
  7. Bake in the preheated oven for 25-30 minutes until golden brown.
  8. Let it rest for a few moments before serving warm.
