Delightful Crème Brûlée Cheesecake Bars with a crunchy graham cracker crust and a silky cheesecake filling topped with a crispy caramel shell.

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • Sugar (for caramelization)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter to form a solid crust.
  3. Blend the softened cream cheese with sugar until silky-smooth.
  4. Add the eggs one at a time, mixing well after each addition, then stir in vanilla extract and sour cream.
  5. Pour the cheesecake mixture over the prepared crust, spreading evenly.
  6. Slide the dish into the oven and bake for 30-35 minutes until set with a slight jiggle in the center.
  7. Once baked, cool to room temperature and chill in the refrigerator for a minimum of 4 hours.
  8. Just before serving, sprinkle a layer of sugar on top and caramelize it with a kitchen torch.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Can be frozen for up to a month without caramelizing the topping.
