  • 2 cups cooked rice (jasmine or basmati preferred)
  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumber
  • 1/4 cup chopped scallions
  • 1 tablespoon sesame seeds (optional)
  • Bang Bang Sauce:
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice

Instructions

  1. Prepare the Coating Mixture: In a medium bowl, combine cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.
  2. Coat the Chicken Pieces: Lightly coat the chicken pieces with the cornstarch mixture, pressing the cornstarch to adhere well. Shake off any excess.
  3. Heat the Oil: Pour the vegetable oil into a frying pan and heat to 350°F (175°C) over medium-high heat.
  4. Fry the Chicken: Carefully add the coated chicken pieces into the hot oil, frying in batches if necessary. Fry until golden brown and crispy, about 5-6 minutes per batch. Ensure the chicken is cooked through, reaching an internal temperature of 165°F (74°C).
  5. Drain the Chicken: Remove the chicken and drain on a plate lined with paper towels to remove excess oil.
  6. Prepare the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice to make the Bang Bang sauce.
  7. Assemble the Bowl: In a large serving bowl, layer the cooked rice at the bottom.
  8. Add the Crispy Chicken: Arrange the fried chicken over the rice.
  9. Garnish with Fresh Ingredients: Top with shredded carrots, sliced cucumber, and chopped scallions.
  10. Drizzle with Bang Bang Sauce: Drizzle the Bang Bang sauce generously over the top. Sprinkle with sesame seeds if desired.
  11. Serve Immediately: Serve immediately and enjoy the delicious flavors that burst in every bite!
