Enjoy these crispy and tender potatoes, seasoned with zesty lemon and fragrant oregano, topped with creamy feta.

Ingredients

  • 4 large potatoes
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • 1 cup feta cheese, crumbled
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut the potatoes into wedges.
  3. In a large bowl, combine olive oil, lemon juice, oregano, salt, and pepper.
  4. Toss the potato wedges in the marinade until well-coated.
  5. Spread the potatoes in a single layer on a baking sheet.
  6. Roast in the oven for about 40-45 minutes, flipping halfway through.
  7. Remove from the oven and sprinkle with crumbled feta and fresh parsley before serving.

Notes

For extra crunch, soak potato wedges in cold water for 30 minutes before roasting. You can also experiment with fresh herbs.
