Deliciously crispy roasted potatoes with a tangy Dijon mustard twist, perfect as a side dish or a light snack.

  • 4 medium Potatoes
  • 3 tablespoons Dijon mustard
  • 3 cloves Garlic, minced
  • 1 tablespoon Herbs (such as rosemary or thyme)
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash your potatoes thoroughly to remove any dirt and cut them into wedges or cubes.
  3. Combine the cut potatoes with Dijon mustard, minced garlic, chopped herbs, olive oil, salt, and pepper in a bowl.
  4. Toss everything well until the potatoes are evenly coated.
  5. Spread the potatoes in a single layer on a baking sheet.
  6. Roast for about 30-40 minutes, turning them halfway through.
  7. Serve the potatoes warm as a delightful side dish or enjoy them on their own.

Notes

For extra crispiness, soak the cut potatoes in cold water for 30 minutes before cooking. Don’t overcrowd the baking sheet for better roasting results.
