  • 2 tablespoons honey
  • 2 tablespoons rice vinegar

Instructions

  1. Preheat your oven to 400°F (200°C) if you’re planning to finish the chicken in the oven later.
  2. Season the chicken thighs with salt and pepper on both sides, ensuring each piece is coated evenly.
  3. Mix together the peanut butter, soy sauce, honey, and rice vinegar until smooth for a delicious coating.
  4. Dip each chicken thigh into the peanut butter mixture, letting any excess drip off, then coat with panko breadcrumbs for maximum crunch.
  5. Fry the chicken in a skillet over medium heat for 5-7 minutes on each side, until golden brown.
  6. Transfer the skillet to the preheated oven, if using, and bake for an additional 10-15 minutes until cooked through.
