Delightful and crispy fritters infused with the sweetness of fresh pineapple, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 large egg
  • 1/2 cup coconut milk
  • 2 cups pineapple, diced
  • 2 cups vegetable oil
  • 2 tablespoons powdered sugar

Instructions

  1. Whisk together the all-purpose flour, cornstarch, baking powder, salt, and granulated sugar in a medium bowl.
  2. Beat the egg with coconut milk in a separate bowl until well combined.
  3. Pour the wet mixture into the dry ingredients and stir until a smooth batter forms.
  4. Fold in the diced pineapple into the batter.
  5. Heat the vegetable oil in a deep skillet or pot over medium heat until it reaches about 350°F.
  6. Drop portions of batter into the hot oil, frying for 2 to 3 minutes per side until golden and crispy.
  7. Transfer the cooked fritters to a paper towel–lined plate to drain excess oil, then dust with powdered sugar before serving.

Notes

Serve warm with coconut yogurt or a drizzle of honey. Can be stored for up to two days in an airtight container.
