Delightful Croatian Peach Cookies filled with apricot jam, perfect for gatherings and sweet moments.

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/2 cup apricot jam
  • Food coloring (optional, for the peach color)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the flour and baking powder in a bowl.
  3. Cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla and almond extracts.
  5. Gradually add the flour mixture to the wet ingredients, mixing gently.
  6. Shape the dough into small balls and flatten them slightly.
  7. Place a dollop of apricot jam in the center of each dough piece and fold over the jam.
  8. Bake on a lined baking sheet for 15-20 minutes or until golden.
  9. Add food coloring to powdered sugar for dusting if desired.

Notes

Store cookies in an airtight container for up to a week, or freeze for up to three months.
