A comforting and creamy chicken chili made effortlessly in a crockpot.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 1 packet taco seasoning
  • 8 oz cream cheese
  • 1 cup chicken broth
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • Salt and pepper to taste
  • Optional toppings: cheddar cheese, sour cream, cilantro

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the black beans, corn, diced tomatoes, taco seasoning, onion, bell pepper, and chicken broth.
  3. Cover the crockpot and cook on low heat for 6-8 hours or high heat for 3-4 hours.
  4. Add the cream cheese on top about 30 minutes before serving.
  5. Season with salt and pepper to taste, then serve with toppings.

Notes

For ultra-tender chicken, opt for frozen chicken breasts. Feel free to mix up the veggies and spices to suit your taste.
