A cozy and easy crockpot dish featuring succulent chicken simmered in a lemony garlic sauce with capers.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup lemon juice
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup unsalted butter
  • 1/4 cup capers
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Place the chicken in the crockpot.
  2. Mix the flavorful sauce by whisking together lemon juice, garlic, chicken broth, and butter, seasoning with salt and pepper.
  3. Pour the mixture over the chicken in the crockpot.
  4. Add the capers on top of the chicken.
  5. Cook on low for 6-7 hours or high for 3-4 hours.
  6. Garnish with parsley and serve with your favorite sides.

Notes

For a thicker sauce, remove the lid during the last hour of cooking. Add red pepper flakes for heat, or swap chicken for fish or shrimp for a variation.
