Crockpot Salsa Chicken

A comforting blend of flavors with tender chicken cooked in salsa and taco seasoning, perfect for busy weeknights.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 package taco seasoning
  • 1 cup corn (optional)
  • 1 can black beans (optional)
  • 1 cup shredded cheese (optional)
  • Chopped cilantro for garnish (optional)

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Pour the salsa over the chicken.
  3. Sprinkle the taco seasoning over the salsa.
  4. Add the corn and black beans if using.
  5. Cover and set the crockpot to cook on low for 6-8 hours or high for 3-4 hours.
  6. Shred the chicken with two forks in the pot.
  7. Serve in bowls or tortillas, topping with cheese and cilantro if desired.

Notes

Leftovers can be stored in an airtight container for up to 4 days or frozen for 3 months. Spicy salsa or jalapeños can be added for heat.
