  • 1 medium Tomato (diced)
  • ½ cup Feta Cheese (optional for added flavor)
  • 1 tablespoon Olive Oil (for sautéing)
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • 1 teaspoon Dried Herbs (optional, like oregano or basil)

Instructions

  1. Prep your veggies by chopping your fresh spinach, bell peppers, onions, and tomatoes.
  2. Sauté the vegetables in a skillet with olive oil over medium heat until the onions are translucent.
  3. Combine the egg whites, salt, black pepper, and dried herbs in a bowl, then fold in the sautéed vegetables and diced tomatoes.
  4. Pour the mixture into a greased baking dish, adding feta cheese on top if desired.
  5. Bake in a preheated oven at 375°F (190°C) for about 25 minutes.
