  • 8 oz (225 g) high-quality dark chocolate (70% cocoa or higher), chopped
  • 1 cup (240 ml) heavy cream
  • 1 tablespoon instant espresso powder
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • Cocoa powder, for dusting
  • Chocolate shavings or finely chopped nuts (optional, for coating)

Instructions

  1. Chop the dark chocolate into small, even pieces and place it in a heatproof bowl.
  2. Combine the heavy cream, instant espresso powder, and sea salt in a saucepan over medium heat. Bring to a simmer, stirring occasionally.
  3. Pour the hot cream mixture over the chopped chocolate and let it sit for 2-3 minutes.
  4. Gently stir the chocolate and cream mixture until smooth and shiny. Add the unsalted butter and vanilla extract, mixing until fully incorporated.
  5. Cool the ganache to room temperature, then cover and refrigerate for about 2 hours until firm.
  6. Scoop portions of the ganache, about 1 tablespoon each, and roll them into balls using your hands.
  7. Roll the truffles in cocoa powder to coat, and optionally in chocolate shavings or nuts.
  8. Chill the finished truffles on a parchment-lined baking sheet for 30 minutes before serving.

Notes

Store in an airtight container in the refrigerator for up to one week. Allow to sit at room temperature for 15-20 minutes before serving for optimal texture.
