A comforting loaf of bread infused with the sweetness of Medjool dates and the crunch of walnuts, perfect for breakfast or as a snack.

Ingredients

  • 1 cup pitted Medjool dates, chopped
  • 1 cup boiling water
  • 1 teaspoon baking soda
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup walnut halves, roughly chopped

Instructions

  1. Soak the Medjool dates: Place chopped Medjool dates in a heatproof bowl, add baking soda, and pour boiling water over them. Let them soak for 15 minutes until completely softened.
  2. Preheat your oven to 350°F (175°C). Grease and line a 9×5 inch loaf pan with parchment paper, leaving an overhang on both long sides for easier removal.
  3. Combine wet ingredients: In the bowl with the soaked dates, add melted butter, brown sugar, eggs, and vanilla extract. Whisk everything together until fully combined.
  4. Mix dry ingredients: In a separate bowl, whisk together flour, baking powder, cinnamon, and salt.
  5. Combine the mixtures: Fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix!
  6. Add walnuts: Gently fold the chopped walnuts into the batter, saving a small handful to sprinkle on top before baking.
  7. Fill the pan: Pour the batter into the prepared loaf pan. Scatter the reserved walnuts on top for extra crunch.
  8. Bake in the preheated oven for 55–65 minutes, or until a toothpick inserted in the center comes out with only a few moist crumbs clinging to it.
  9. Cool the bread in the pan for 15 minutes before transferring it to a wire rack. Allow it to cool for at least 30 more minutes before slicing into it.

Notes

For best results, avoid overmixing the batter and feel free to customize the nuts used.
