A comforting and nutritious split pea soup, perfect for chilly days, filled with wholesome ingredients.

Ingredients

  • 1 cup split peas (rinsed and drained)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 2 medium carrots (diced)
  • 2 stalks celery (diced)
  • 6 cups vegetable broth (or water)
  • 1 bay leaf
  • To taste Salt
  • To taste Pepper
  • 1 tablespoon olive oil (for sautéing)

Instructions

  1. Start by rinsing and draining the split peas. Chop the onion, mince the garlic, and dice the carrots and celery.
  2. Heat the olive oil over medium heat in a large pot. Add the chopped onion, and sauté until it becomes translucent.
  3. Add the minced garlic and stir it for about a minute until fragrant.
  4. Stir in diced carrots and celery to the pot. Allow to soften for about 5 minutes.
  5. Combine the rinsed split peas with the sautéed veggies.
  6. Pour the vegetable broth (or water) into the pot. Add the bay leaf, salt, and pepper. Bring to a gentle boil, then reduce heat to low.
  7. Let the soup simmer for about 30-40 minutes, or until the split peas are tender and breaking apart.
  8. Taste the soup and adjust seasoning with more salt and pepper if needed. For a creamier texture, blend part of the soup.

Notes

Serve with crusty bread, a fresh salad, or grilled cheese for a heartier meal. Can be stored in the fridge for up to 5 days or frozen for 3 months.
