Delightful breakfast muffins filled with fluffy eggs, vibrant veggies, savory ham, and melty cheese.

Ingredients

  • 6 large eggs
  • 1/2 cup bell peppers, diced
  • 1/2 cup onion, diced
  • 1/2 cup cooked ham, diced
  • 1/2 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing the muffin tin

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin with cooking spray or oil.
  2. Whisk the eggs in a large bowl until well combined. Season with salt and pepper.
  3. Mix in the diced bell peppers, onions, ham, and cheese until combined.
  4. Fill each muffin cup about 3/4 full with the egg mixture.
  5. Bake for 20-25 minutes, or until the muffins are set and lightly golden on top.
  6. Cool slightly before removing from the tin. Enjoy warm or store for later!
