An indulgent cake celebrating the vibrant flavor of raspberries with smooth white chocolate.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups fresh raspberries (or frozen, thawed)
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 8 oz white chocolate, melted and cooled slightly
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons milk (or as needed for consistency)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your cake pans by greasing and lightly flouring them.
  2. Cream together the softened butter and sugar until light and fluffy. Add in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  3. Sift together the flour, baking powder, and salt in another bowl. Gradually add this dry mix into your butter and egg mixture, alternating with the milk. Mix until just combined, being careful not to overmix.
  4. Fold in the raspberries, preserving their shape.
  5. Divide the batter evenly between prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let cool in pans for about 10 minutes before transferring to wire racks to cool completely.
  6. Combine raspberries, sugar, and lemon juice in a saucepan over medium heat. Cook until the raspberries break down and the mixture thickens, about 5-7 minutes. Set aside to cool.
  7. Beat the softened butter until creamy. Gradually mix in the powdered sugar, then add the melted white chocolate. Adjust consistency with milk as needed.
  8. Place one cake layer on a serving plate. Spread raspberry filling over the top. Add the second layer and frost the top and sides with white chocolate frosting.
  9. Decorate with fresh raspberries on top and dust with powdered sugar.

Notes

Make sure your butter and eggs are at room temperature before starting for a lighter cake.
