Ingredients

Scale
  • 4 cups all-purpose flour
  • 1.5 cups warm water
  • 0.25 cups extra virgin olive oil
  • 2 teaspoons active dry yeast
  • 1 teaspoon salt
  • To taste fresh or dried herbs (rosemary, thyme, basil)

Instructions

  1. Activate the yeast: In a large bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy.
  2. Combine ingredients: Add the flour, salt, and olive oil into the yeast mixture. Stir until a shaggy dough forms.
  3. Knead the dough: On a lightly floured surface, knead the dough for about 5 minutes until smooth and elastic.
  4. Let it rise: Transfer the dough to an oiled bowl, cover with a damp cloth, and let rise for about 1 hour.
  5. Preheat the oven: Preheat your oven to 425°F (220°C).
  6. Prepare the baking pan: Grease a 9×13 inch pan with olive oil.
  7. Shape the dough: Once risen, punch down the dough and stretch it into the prepared pan, making dimples across the surface.
  8. Add the herbs: Drizzle olive oil over the top and sprinkle with fresh or dried herbs.
  9. Bake to perfection: Bake for 20-25 minutes until golden brown.
  10. Cool and serve: Allow to cool for a few minutes before transferring to a wire rack and cutting into squares.
