Delightful coconut balls shaped like bunny tails, perfect for Easter celebrations.

Ingredients

  • 2 cups shredded coconut
  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips
  • 1/2 cup confectioners’ sugar

Instructions

  1. In a bowl, mix the shredded coconut, sweetened condensed milk, and vanilla extract until well combined.
  2. Shape the mixture into small balls and place them on a baking sheet.
  3. Chill in the refrigerator for about 30 minutes until firm.
  4. Melt the white chocolate chips in a microwave or double boiler.
  5. Dip each coconut ball into the melted chocolate, allowing excess to drip off.
  6. Roll in confectioners’ sugar for a finishing touch.
  7. Place back on the baking sheet and let set before serving.

Notes

For added flavor, you can mix in some chopped nuts or chocolate chips. You can also use almond extract instead of vanilla for variation.
