Delicious and fluffy pancake poppers, perfect for a quick breakfast or snack.

Ingredients

  • 1 cup flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 large egg
  • 2 tbsp melted butter
  • Optional toppings (chocolate chips, blueberries, etc.)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. Mix together the flour, sugar, baking powder, and salt.
  3. Whisk together the milk, egg, and melted butter in another bowl.
  4. Fold the wet ingredients into the dry ingredients until just mixed.
  5. Fold in chocolate chips or blueberries for added sweetness.
  6. Fill each muffin cup about 3/4 full with batter.
  7. Bake for 12-15 minutes or until golden and a toothpick comes out clean.
  8. Cool slightly before removing from the tin and enjoy warm.

Notes

These poppers can be served with fresh fruits, yogurt, or crispy bacon. Store leftovers in an airtight container in the fridge for up to three days.
