A warm and comforting cabbage soup, perfect for chilly autumn days.

Ingredients

  • 1 head of cabbage, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tablespoon smoked paprika
  • 2 teaspoons dried thyme
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions, carrots, and celery, sautéing until softened, about 5-7 minutes.
  3. Stir in the minced garlic, smoked paprika, and dried thyme, cooking for another minute.
  4. Add the chopped cabbage, vegetable broth, and diced tomatoes to the pot.
  5. Bring the mixture to a boil, then reduce the heat and simmer for about 30 minutes, or until the cabbage is tender.
  6. Season with salt and pepper to taste.
  7. Serve hot and enjoy!
