A comforting homemade chicken casserole filled with tender chicken, creamy soup, and topped with crunchy cornflakes.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheese
  • 1 cup frozen mixed vegetables
  • 2 cups cooked rice or pasta
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup crushed cornflakes (optional for topping)
  • 2 tablespoons butter (optional for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the cooked chicken, cream of chicken soup, sour cream, shredded cheese, frozen mixed vegetables, rice or pasta, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
  3. Pour the mixture into a greased baking dish and spread it evenly.
  4. Mix the crushed cornflakes with melted butter and sprinkle it evenly over the top of the casserole.
  5. Bake in the preheated oven for 30-35 minutes or until bubbly and golden brown on top.
  6. Remove from the oven and let it sit for a few minutes before serving.

Notes

Serve with a fresh salad or crusty bread. Can be prepared a day in advance and stored in the refrigerator.
