Quick and flavorful chicken fajitas made on a single sheet pan, perfect for busy weeknights.

Ingredients

  • 1 pound boneless, skinless chicken breast, sliced into strips
  • 2 bell peppers, any color, sliced
  • 1 medium onion, sliced
  • 3 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika (or regular paprika)
  • Salt and pepper, to taste
  • Tortillas for serving
  • Chopped cilantro for garnish (optional)
  • Lime wedges for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine sliced chicken, bell peppers, and onion in a large mixing bowl.
  3. Drizzle in the olive oil and sprinkle the chili powder, cumin, garlic powder, smoked paprika, salt, and pepper over the mixture.
  4. Toss everything together until well coated in the spices.
  5. Spread the mixture out in a single layer on a sheet pan.
  6. Bake for 20 minutes, or until the chicken is cooked through and the veggies are tender.
  7. Warm the tortillas in a dry skillet over medium heat for about 1 minute on each side.
  8. Serve the fajitas directly from the pan for a casual meal.
