  • 1 packet instant yeast (about 2 ¼ teaspoons)
  • 2 teaspoons salt
  • ¼ cup olive oil (plus some for drizzling)
  • 4 cloves garlic, minced
  • â…“ cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon coarse sea salt (for topping)

Instructions

  1. Prepare the Dough: In a large mixing bowl, combine the warm water and yeast. Let it sit for 5-10 minutes until the mixture gets frothy.
  2. Mix the Dry Ingredients: In another bowl, whisk together the flour, salt, garlic, and oregano.
  3. Combine Wet and Dry Ingredients: Pour the frothy yeast mixture into the bowl of dry ingredients, along with the olive oil. Stir until the mixture forms a shaggy dough.
  4. Knead the Dough: Turn the dough onto a floured surface and knead for around 5-7 minutes until it’s smooth and elastic.
  5. First Rise: Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until it has doubled in size.
  6. Shape the Focaccia: After the rise, gently punch down the dough to release any air. Transfer it to a greased baking pan, stretching it out gently.
  7. Season the Surface: Make deep dimples in the dough, drizzle with olive oil, and sprinkle the grated Parmesan and coarse sea salt over the top.
  8. Second Rise: Cover the dough again with a clean towel and let it rise for another 20-30 minutes.
  9. Bake the Focaccia: Preheat your oven to 425°F (220°C). Bake for about 20-25 minutes, or until golden brown.
  10. Cool and Serve: Let the bread cool for at least 10 minutes before slicing. Serve warm with an extra drizzle of olive oil.
