A delightful celebration of autumn’s bounty wrapped up in a moist, fluffy cake with the sweetness of maple syrup and ripe pears.

Ingredients

  • 2 ripe pears, peeled and diced
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Cream together the softened butter and sugar until light and fluffy, about 3-5 minutes.
  3. Beat in the eggs one at a time and stir in the maple syrup.
  4. Combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in another bowl.
  5. Add the dry mixture to the wet ingredients, mixing until just combined.
  6. Fold in the diced pears.
  7. Transfer the batter into the prepared cake pan, smoothing it out.
  8. Mix together the rolled oats and brown sugar, then sprinkle over the top.
  9. Bake for 40-50 minutes or until a toothpick comes out clean.
  10. Cool in the pan for a few minutes before transferring to a wire rack.

Notes

Serve warm or at room temperature, pairs well with whipped cream or vanilla ice cream.
