  • 4 chicken thighs
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon cinnamon
  • 1 cup olives, pitted
  • ½ cup raisins
  • Juice of 1 lemon
  • Rice or couscous for serving

Instructions

  1. Season the chicken thighs generously with cumin, turmeric, and cinnamon.
  2. Heat a splash of oil in a large pot over medium heat, then add the seasoned chicken, browning it on all sides.
  3. Add the olives, raisins, and lemon juice into the pot.
  4. Cover the pot and let it simmer until the chicken is cooked through, about 25 minutes.
  5. Serve the chicken over a bed of rice or couscous.

Notes

Leftover Moroccan chicken can be stored in an airtight container in the refrigerator for up to 3 days. You can also freeze it for up to a month.
