A portable and easy version of traditional pecan pie, these bars feature a crispy crust and gooey, nutty filling.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 1 cup pecans, chopped
  • 1 cup corn syrup
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Combine the flour, butter, brown sugar, and salt to form a crumbly base.
  3. Press this mixture evenly into the bottom of the prepared pan.
  4. Bake for 10-12 minutes until lightly golden.
  5. Whisk together the corn syrup, granulated sugar, eggs, and vanilla until smooth.
  6. Stir in the chopped pecans.
  7. Pour the pecan mixture over the baked crust and spread evenly.
  8. Bake for an additional 25-30 minutes, until set.
  9. Cool before cutting into bars.

Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
