A quick and delicious dish that captures all the flavors of traditional egg rolls without the hassle of wrapping and frying.

Ingredients

  • 1 pound ground pork or chicken
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 clove garlic, minced
  • 1 teaspoon ginger, minced
  • 4 cups coleslaw mix (cabbage and carrots)
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Heat the Oil: In a large skillet, heat 1 tablespoon of sesame oil over medium heat. Allow it to shimmer slightly but ensure it doesn’t smoke.
  2. Brown the Meat: Add 1 pound of ground pork or chicken to the skillet. Cook until it’s nicely browned, about 5-7 minutes.
  3. Sauté Aroma Ingredients: Stir in 1 minced clove of garlic and 1 teaspoon of minced ginger. Let them cook for another minute.
  4. Combine Coleslaw Mix with Soy Sauce: Add 4 cups of coleslaw mix and 1 tablespoon of soy sauce to the skillet. Stir until the cabbage wilts.
  5. Season to Perfection: Season the mix with salt and pepper to taste.
  6. Garnish and Serve: Top with sliced green onions and serve in bowls.

Notes

This dish can be easily adapted to be vegetarian or spiced up with the addition of a jalapeño.
