A light and fluffy egg white frittata packed with fresh spinach, bell peppers, and feta cheese, perfect for a nutritious breakfast.

  • 1 cup spinach, chopped
  • 1/2 bell pepper, diced
  • 1/4 cup onion, diced
  • 1/4 cup feta cheese, crumbled
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil over medium heat in a skillet.
  3. Add the onion and bell pepper, sauté until softened, about 3-4 minutes.
  4. Toss in the chopped spinach and cook until wilted, about 1-2 minutes.
  5. Whisk the egg whites with salt and pepper in a bowl.
  6. Pour the egg whites over the cooked vegetables and sprinkle with feta cheese.
  7. Cook on the stovetop for 2-3 minutes until the edges set.
  8. Transfer the skillet to the oven and bake for 10-15 minutes until fully set.
  9. Cool slightly before slicing and serving.

Notes

For extra flavor, consider adding herbs like dill or cilantro. You can also swap spinach for kale or add diced tomatoes.
