A comforting dish featuring layers of crispy eggplant, rich marinara sauce, and melted cheeses, perfect for family gatherings.

Ingredients

  • 2 large eggplants
  • Salt
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup all-purpose flour
  • 3 large eggs
  • 2 cups breadcrumbs
  • Olive oil
  • Fresh basil (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the eggplants into 1/2-inch rounds and sprinkle them with salt. Allow them to sit for 30 minutes, then rinse and pat dry.
  3. Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
  4. Dip each eggplant slice in flour, then in the egg, and finally coat with breadcrumbs.
  5. Heat olive oil in a skillet over medium heat and fry each eggplant slice until golden brown.
  6. Spread a thin layer of marinara sauce in a baking dish, and layer with eggplant slices, mozzarella, and Parmesan cheese. Repeat until all ingredients are used.
  7. Bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
  8. Garnish with fresh basil before serving.

Notes

For a healthier version, consider baking the breaded eggplant instead of frying.
